Vegetable Soup 1 lb ground Beef 1 or 2 large Onions 2 Quarts or Large Can of Tomato Juice or Vegetable Juice 1 pint each or 1 small frozen bag each of greens beans, black beans, peas, carrots, corn, lima beans Directions Brown ground beef and diced onions. Combine all ingredients, add pepper, tumeric, small amount of chili powder to season and possibly a small diced red pepper if you like. Salt per your specifications, many people use a limited amount per health reasons. Simmer 2 hours or more. Vegetable Soup is a great item to pressure can in quart jars for later meals.
Harverd Beets 2 cups canned beets (1 pint or half quart) In saucepan combine sugar, corn starch, and salt. Stir in reserved beet
liquid, vinegar, and butter. Cook and stir until mixture thickens.
Green Beans with Pimento Ingredients
Directions Heat oil in a large skillet over medium heat. Add garlic and cook 1 minute. Add green beans and pimento and cook 2 minutes. Add vinegar and water, cover and steam 3 to 5 minutes. Season, to taste, with salt and pepper. |
